I am quite intrigued about exactly how this type of microscope is used. I have some vague ideas. Can anyone englighten me?

Hi,
This is a Zeiss light-sheet microscope (Lichtschnittmikroskop).
It has pairs of objectives perpendicular to each other, one for illumination and one for imaging. You can use it for all kinds of surface observations.
