Geez, Waldo, these are amazing! So they appear to be cross polarized which suggests that some of the bodies in these Phaci are crystaline.

They are called paramylon grains or bodies, paramylon is a polysaccaride different but close to starch, and is more crystalline than true starch.

Not exactly crystaline but starch grains consists in (mostly) linear mollecules highly organized in concentric layers, so it's also birrefringent.
An easy and nice observation of the same phenomenon can be done with a bit of the liquid obtained when cutting a potato under cross pol or DIC
