Doing a bit of both is an excellent approach, though a bit challenging to pull off. Done perfectly, you can keep the lens entrance pupil in exactly the same spot while sweeping focus. That means that all frames will have the same perspective, though different scale. Let the software adjust scale and alignment (just to compensate for the occasional wiggle), and this will be about as good as it gets!

Really super photos Dave. Beautiful colors on them. They do make a nice contrast against the spiny surface of the cactus.
