You might consider an Olympus which does in camera focus stacking. I don't know if Canon has this feature.

p.s. Renting a camera and testing various lens would be beneficial.

One thing that helps when disassembling (and reassembling)linear slides is to remove the rail from carriage. In other words, have the carriage on the table not the rail. I designed it in Fusion 360, then 3d printed it in ABS. Each ring was printed separately to avoid using supports and to make it easier to clean up the inside surfaces. When you said dental wax, I thought perhaps machinable wax would work, but the melting temperature is probably too high. Dental wax seems to be readily available at any drug store pretty economically, but I don't know if it's the same type of wax as Thomas Eisner used.

Not missing anything. I think it's fairly weak, so it might be removable. There are probably better adhesives that can released easier without harmful chemicals.

This hood has worked well for me. It's rectangular. Any light hitting the side is reflected back out.

Yes, but it helps to have it on a stage for initial focusing and composition.

100mm is a little short for focusing with the bellows. Perhaps having replaceable lens mounting brackets would work.

Definitely if you want to shoot non-orthoganal panoramas. Moving the lens' entrance pupil to the rotation point for the panorama is easier than moving the rotation point.
